After two weeks off, I was back to school today! I feel like I only spent 2 days at home but at the same time, I feel like it’s been an entire summer holiday since I last saw my class.

I fueled my way through the morning with an oatmeal banana boat. Topped with all power giving super-foods in my pantry.

Have I mentioned that the worse part about jet-leg isn’t being tired? Contrary to popular belief, the inability to sleep is by far the most terrorizing effect of traveling through time zones. You may be able to tell that I couldn’t sleep last night.

1/3 cup oats

1/3 cup coffee

1/3 cup milk

dash of salt and 1 T. brown sugar

1 banana

flax, maca powder, chia seeds, hemp, cinnamon

nutella

Once I was at school, my energy level popped back up. Being with a bunch of excited kids who have missed me may have helped.

My morning snack was a homemade protein bar.

Lunch included the leftover tofu taco fixings in the form of a taco salad.

I enjoyed one un-photographed pear during class fruit snack.

After school I tutored a once hesitant young mathematician who now exclaims, “I’m just going to say it, I LOVE MATHS!!!”

I had big plans to go to the gym after school. I even woke up early from my sleepless night in order to pack my bag. By the time the work day was over, I was absolutely exhausted.

My after school snack was a Coco Kefir Strawberry Smoothie.

1 frozen banana

3/4 cup strawberries

1/2 cup kefir

1 Tbsp. chocolate protein powder

1 tsp. dark coco powder

1 tsp. coconut powder

1/2 tsp. maca powder

Since being back, I’m making a real effort to organize and minimize. Yesterday I consolidated lotion and shampoo bottles and cleaned out my bathroom cabinet. I also went through the fridge and threw out old condiments. Today, I organized my computer recipe wish list.

While reading blogs, I star the recipes that I’d like to try. As you can imagine, by starred folder grows quite quickly. Every now and then, I put the recipe name, a photo, and the link into a word document. This way, all my recipe wishes are in one place, no reading through saved posts. Simple.

Dinner was also simple. I started with an appetizer of roasted garlic crackers and a wedge of Camembert cheese.

The main meal was baked tofu with a smear of Korma marinade and steamed green beans.

Something cute to share- I had my students write a letter to me from the future. This is part of an autobiography project we do throughout the year. I thought I’d share a sample of one student’s letter.

Notice the vegetarianism? I probably have something to do with that one.

I’m planning on an early night tonight… wish me luck! I need sleep!
